restaurant faves at home: rocco's tacos guacamole

If you can’t go to Rocco’s Tacos, then where can you go?

It was Cinco de Mayo. Dining in at restaurants was a no go. Prior to covid, I just knew I was gonna be sipping margaritas and eating my favorite guac at a spot called Rocco’s Tacos. They have some of the best guac ever and they make it fresh to order right at your table. I’ve been chefing it up a bit these days and I knew I could probably find a copycat recipe (which I did) so I whipped it up and it was bomb! Not as superb as getting it from the restaurant but I’ll give it a close second. It’ll be the way I make guac from now on! Here’s what I used:

Ingredients

1 avocado

1/2 lime, juiced

1 tsp tomatoes, diced

1 tsp red onions, diced

1 tsp fresh cilantro, chopped

1 tsp green chiles, chopped

1/2 tsp salt

1/2 tsp Rocco’s Spice (the secret ingredient in my opinion)

I had never made fresh guac and once I did it, I can’t recall why I never gave it a try. It is BEYOND easy to do!

  1. Cut avocado in half. Remove seed. Remove flesh with a spoon into a bowl.

  2. Add the juice from half of fresh lime.

  3. Mash avocado and lime juice with a fork until desired texture is achieved.

  4. Add tomatoes, red onions, cilantro, green chiles, salt and Rocco’s Spice. Combine well.

  5. Enjoy with tortilla chips!

See how easy that is! I’ve made it several times as a snack or to add to my salads. If you can’t find Rocco’s seasoning (unfortunately it can only be found at select Publix grocery stores and Rocco’s Tacos restaurants), feel free to use Emeril’s Original Essence All Purpose Seasoning or your own concoction of spices. This recipe can be adapted to suit whatever you like so feel free to deviate from the ingredients used.
